Moving and Mayonnaise

Hi everyone!!
It’s such a beautiful, warm morning and it is finally starting to feel like Spring!

The last couple days have been very stressful with moving some of our items. 
We are staying halfway between each house since we haven’t sold just yet. We’ve had quite a few showings of the house but unfortunately no offers have presented themselves just yet. 
I’m keeping my fingers crossed!!

It’s so odd how moving feels like such a life change. It’s so hard to get used to. 
Thankfully my cats are feeling just fine about it!! They are loving the new (temporary) surroundings and are grateful to be in a smaller space constantly around my hubby and I! 
Haha!

I made a great dinner the other day for my hubby and I, and it is an easy, filling recipe for any day of the week!
My mom had originally shared the recipe with me (she got it online off of the Hellmanns recipe site) and I have been making the recipe at least once a week!

What you will need:

4 boneless, skinless chicken breasts (I used 2 large chicken breasts because I didn’t have anything else in the fridge)
1 cup mayonnaise
½ cup parmesan cheese (Grated)
¼ cup bread crumbs (Use half in mixture and half sprinkled on top)
You can also include any extra spices that you prefer, we made it with just the plain mixture this time around.

Directions:


In a small bowl, mix together the mayonnaise, parmesan cheese, and half of the bread crumbs. Stir together until mixture is fully combined. Put out the chicken breast on a pan, and spoon the mixture onto the chicken breast. Evenly place the mix, making sure to cover and surface area. Sprinkle the remainder of the breadcrumbs and bake at 425 for 20-30 minutes (or until chicken has been cooked through). Enjoy!!


SO EASY!




P.S...for the people out there that don't like mayonnaise- you can't taste it!! I promise!! My hubby is SO fussy and would DIE if he knew mayonnaise is included in this recipe!!
